Rain is a welcome sight around here. We haven’t had good rain in Chicago since October or November of last year. It began raining last night and we even got some thunderstorms, which were perfect to fall asleep to. Today has just been a rainy, damp, cold day, one that is perfect for some hot comfort food. Enter tonight’s dinner. On Wednesday, one of my favorite food blogs, Lunch Box Blues by JM Hirsch, did a post about easy steak hand pies for his son’s lunch and a light bulb went off in my head. Hand pies! Of course! Why hadn’t I thought of those earlier? They are basically like homemade hot pockets (only without all the junk) and meet all my criteria for a good dinner: they’re quick and easy to make, inexpensive, super versatile, and they make a lot. I made Barbecue Chicken Nacho hand pies, which are basically a hand pie version of the barbecue chicken nachos I make sometimes. All I did for these was roll out refrigerated pie dough, cut it into circles, filled each with a bit of shredded barbecue chicken, shredded cheese, and crushed tortilla chips, the folded each dough circle in half, sealed the edges, and baked them for about 20 minutes. Homemade barbecue chicken hot pockets in under 30 minutes. Add some garlic roasted potatoes and it made for a nice comfort dinner on a rainy Thursday.
