Some days you just need good comfort food. I’m not sure Mexican inspired dishes are typically thought of as comfort food, but these enchiladas meet all the criteria: they’re warm, easy to make, tasty, and most importantly cheesy. Probably not the healthiest, but comfort food isn’t about being healthy; it’s about feeling good. Admittedly, I take a lot of help from the store on this one. I use rotisserie chicken from the deli, because it’s easy and already cooked. All you have to do is shred it into a bowl, splash some enchilada sauce on, mix it up and scoop it into tortillas. I put a tiny bit of cheese inside before I rolled up the enchiladas and put them in a baking dish with even more sauce and cheese. 20 minutes in the oven and dinner is ready. So simple and so tasty. And the best part is that they get to be enjoyed at home.
